Umami is the sixth taste, discovered by the Japanese in the early 1900s, and is a savory flavor that comes from glutamate.

The choice of the restaurant’s name is not at all random, as my umami is sought in taste but with deep respect for the raw ingredients.

For Leandro, born and raised on the Island of Elba, Umami is the dream of a lifetime spent in the kitchen, the opportunity to bring his island, his years of experience, his passion and his creativity to his dishes.

Starting in the kitchen at a young age was crucial for Leandro, as it brought him in contact with the roots of Elban culinary tradition, which became the foundation of his cuisine. His curiosity, passion and dedication allowed him to refine his techniques and, combined with creativity, imagination and instinct, bring his dishes to life.
